With their intense flavour and aroma, dried porcini mushrooms are a concentrated source of umami, a flavour enhancer used in a variety of Italian dishes. To rehydrate, add the mushrooms to a saucepan with at least 500ml hot water and boil for around 5 to 7 minutes. Remove the mushrooms and rinse with fresh water.  Add finely chopped rehydrated mushrooms to add depth to risottos, pastas, and stews.
