Aged for over 20 years in handmade wooden barrels of chestnut, cherry, juniper, oak, walnut, and elm, Villa Manodori's 'Extra Vecchio' is a true Modenese delicacy. Due to its limited production, this balsamic should be used sparingly and every drop relished. Chef Massimo Bottura recommends using a few drops to finish a risotto, or paired with an aged hard cheese.
